15-Minute Sri Lankan Beef with Curry Sauce & Coconut Sambal

Take your tastebuds on a trip to Sri Lanka tonight with this delightful dish. Pre cooked rice and a carefully crafted Sri Lankan spiced curry sauce take all the hard work out of this 15 minute meal.


Ingredients

Sauce & Rice

  • 1 pack Sri Lankan curry sauce
  • 1 pack pre-cooked basmati rice

Beef

  • 1 drizzle of oil
  • 300g beef sirloin steaks
  • 1/2 pack Sri Lankan spices

Salad

  • 1 twin pack baby bok choy, thinly sliced
  • 1 Lebanese cucumber, cut in half lengthways & thinly sliced
  • 1 1/2 tsp rice wine vinegar
  • 1 pack coconut thread
  • 1 pack crispy shallots

Steps

  1. Heat oil in a large fry-pan on medium-high heat. Pat beef dry, season with salt and toss with Sri Lankan spices. Cook for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered, to rest before slicing thinly. Reserve pan.
  2. Thinly slice bok choy and cucumber and toss in a medium bowl with vinegar. Top with coconut thread and crispy shallots.
  3. Return reserved pan to medium heat and add Sri Lankan curry sauce. Heat for about 2 minutes, until warmed through, season to taste with salt. Meanwhile, squeeze rice in pack to separate grains. Tear top and microwave in pack for 3 minutes.
  4. Rice topped with beef, any resting juices, sauce and salad
