Take your tastebuds on a trip to Sri Lanka tonight with this delightful dish. Pre cooked rice and a carefully crafted Sri Lankan spiced curry sauce take all the hard work out of this 15 minute meal.
Ingredients
Sauce & Rice
- 1 pack Sri Lankan curry sauce
- 1 pack pre-cooked basmati rice
Beef
- 1 drizzle of oil
- 300g beef sirloin steaks
- 1/2 pack Sri Lankan spices
Salad
- 1 twin pack baby bok choy, thinly sliced
- 1 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1 1/2 tsp rice wine vinegar
- 1 pack coconut thread
- 1 pack crispy shallots
Steps
-
Heat oil in a large fry-pan on medium-high heat. Pat beef dry, season with salt and toss with Sri Lankan spices. Cook for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered, to rest before slicing thinly. Reserve pan.
-
Thinly slice bok choy and cucumber and toss in a medium bowl with vinegar. Top with coconut thread and crispy shallots.
-
Return reserved pan to medium heat and add Sri Lankan curry sauce. Heat for about 2 minutes, until warmed through, season to taste with salt. Meanwhile, squeeze rice in pack to separate grains. Tear top and microwave in pack for 3 minutes.
-
Rice topped with beef, any resting juices, sauce and salad
