Crumbed Fish Bites with Chips, Crushed Greens and Sweet Chilli Mayo

A healthy take on fish 'n' chips!


Ingredients

CHIPS

  • 200g red kumara, scrubbed, cut into 1cm-thick chips
  • 400g potatoes, scrubbed, cut into 1cm-thick chips

CRUSHED GREENS

  • 1/2 cup water
  • 1 teaspoon salt
  • 1 head broccoli, florets and stalk roughly diced
  • 1 clove garlic, chopped
  • 1/2 bag frozen peas, defrosted
  • 1 1/2 tablespoons chopped mint leaves
  • 1 tablespoon olive oil
  • 2 teaspoons butter

CRUMBED FISH BITES

  • 450g fish fillets
  • 1/2 cup GF flour seasoned with 1/2 teaspoon salt
  • 1 egg
  • 3 tablespoons milk
  • 1/2 cup GF breadcrumbs

SWEET CHILLI MAYO

  • 1/2 cup GF mayonnaise
  • 1 - 2 teaspoons GF mild sweet chilli sauce (optional, adults) or GF tomato sauce
  • 1 lemon, cut into wedges (optional, adults)

Steps

  1. oven to 220°C. Line an oven tray with baking paper
  2. Toss kumara and potatoes with olive oil and spread in a single layer on prepared tray. Season with salt and pepper. Bake for 25–30 minutes, turning once during cooking.
  3. Bring water and salt to the boil in a pot (with a lid). Add broccoli and garlic and cook on low, covered, for about 7 minutes until tender. Add peas in final 1 minute of cook time to warm through.
  4. Add mint, oil and butter. Season with salt and pepper and crush with a masher.
  5. Pat fish dry, remove any remaining scales or bones and dice 4cm. Place seasoned flour in a bowl, whisk egg and milk in another bowl and place breadcrumbs in a third bowl. Coat each piece of fish, first in flour, then egg, then breadcrumbs, shaking off excess as you go.
  6. Heat a drizzle of oil in a fry-pan on medium heat. Cook fish, in batches, for 2–3 minutes each side (depending on thickness), until golden and cooked through. Add oil between batches, as required. While fish is cooking, mix mayonnaise with sweet chilli sauce (or tomato sauce for the kids).
  7. Divide chips, crushed greens and crumbed fish bites between plates. Place a dollop of sweet chilli mayo on the side and squeeze over lemon juice (if desired).
