Cauliflower Mac ‘N’ Cheese

A veggie filled mac 'n' cheese!


Ingredients

CAULIFLOWER MAC 'N' CHEESE

  • 200g macaroni pasta
  • 1/4 - 1/2 cauliflower, roughly chopped into small pieces
  • 1/2 brown onion, finely diced
  • 1 clove garlic, minced
  • 50g semi-dried tomatoes, chopped
  • 3/4 cup milk
  • 1/4 cup cream
  • 1/4 teaspoon salt
  • 1 cup grated tasty cheese (reserve 1/4 cup for topping)
  • 1 teaspoon cornflour mixed with 1 tablespoon water
  • 1/4 cup fine wholemeal breadcrumbs

SPINACH AND TOMATO SALAD

  • 2 tomatoes
  • 2 tablespoons mint
  • 1/2 bag baby spinach leaves

DRESSING

  • 1 1/2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons oil
  • 1/2 teaspoon mustard (e.g. Dijon, wholegrain)
  • 1/4 teaspoon runny honey

Steps

  1. oven to grill. Bring a large pot of salted water to the boil.
  2. Cook pasta in pot of boiling water for 5 minutes. Add cauliflower and cook for a further 4 minutes, or until cauliflower is tender. Drain well and return pasta and cauliflower to pot on low heat to steam for 30 seconds (to dry macaroni). Drizzle with oil and cover to keep warm.
  3. Heat a drizzle of oil in a fry-pan on high heat. Cook onion, garlic and semi-dried tomatoes for 3 minutes, or until onion is soft. Add milk, cream, salt, cheese and cornflour/water mix to onions and cook on medium heat for a further 1 minute, or until sauce thickens.
  4. Add sauce to pot with pasta and cauliflower and return to a medium heat for 1 minute, or until heated through. Mix well and season to taste with salt and pepper.
  5. Spoon cauliflower mac and cheese into a large baking dish or 2–3 individual ramekins. Sprinkle over breadcrumbs then reserved cheese. Grill for about 3 minutes, or until top is golden and crunchy.
  6. While cauliflower mac and cheese is grilling, prepare salad. Dice tomatoes 2cm; roughly chop mint; place in a bowl with spinach. In a small bowl, mix all dressing ingredients together and then toss through salad just before serving.
  7. Divide cauliflower mac and cheese between plates and serve salad on the side
