Turkish Lamb Pide with Capsicum, Carrot and Mint Salsa

Ingredients

TURKISH LAMB PIDE

  • 2 GF Turkish pide
  • 5 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1/4 - 1/2 teaspoon sugar
  • 1 brown onion, finely diced
  • 1 clove garlic, finely chopped
  • 450g lamb mince
  • 1 1/2 tablespoons GF Turkish spice mix
  • 1 tomato, finely diced

CAPSICUM, CARROT AND MINT SALSA

  • 1 teaspoon runny honey
  • 3/4 tablespoon GF vinegar (e.g. cider, white wine, red wine)
  • 2 tablespoons olive oil
  • 1 capsicum, cut in half lengthwise, core and seeds removed and thinly sliced
  • 2 carrots, peeled and grated
  • 1 Lebanese cucumber, diced 2cm
  • 2 tablespoons chopped mint leaves

TO SERVE

  • 1/2 cup natural yoghurt
  • 1 tablespoon chopped mint leaves

Steps

  1. oven to 200°C. Line an oven tray with baking paper
  2. Cut both Turkish pide in half, then cut each piece horizontally through the middle, to make 4 pieces (you should have 8 pieces in total).
  3. Place pide pieces, cut-side-up, on prepared tray. Mix tomato paste with olive oil and sugar and evenly spread over each pide. Toast in oven for 8–10 minutes or until lightly golden and crisp.
  4. Heat a drizzle of olive oil in a large fry-pan on medium-high heat. Cook onion, garlic, lamb mince and spice mix, breaking up mince with a spoon until mince is browned and cooked through, about 7 minutes.
  5. Remove from heat, stir through tomato and season with salt and pepper.
  6. In a large bowl, whisk together honey, vinegar and olive oil. Add remaining salsa ingredients, season with salt and pepper and toss to combine.
  7. Divide pide between plates, top with Turkish lamb mince mixture and drizzle with yoghurt. Serve with salsa and extra yoghurt on the side. Garnish with extra mint.
