Middle Eastern Spiced Lamb Kofta with Chermoula Orzo & Feta

What are kofta? It's not a single dish but a family of them; and they're essentially meatballs. What sets them apart is their spicing - warming, aromatic and absolutely mouth-watering. They're prevalent throughout the Middle East, hence the flavours and accompaniment of choice in this recipe - chermoula mayo and our Middle Eastern Spice blend.


Ingredients

Orzo

  • 1/3 pack orzo pasta
  • 150g frozen peas
  • 1 tsp white wine vinegar
  • 1 Tbsp chermoula mayo
  • 50g roasted capsicum, diced
  • 50g baby spinach
  • 1 drizzle of olive oil

To Serve

  • 1 Tbsp chermoula mayo
  • 30g feta cheese, crumbled

Kofta

  • 25g breadcrumbs
  • 1/2 egg
  • 1 pack Middle Eastern spice blend
  • 300g lamb mince
  • 1 carrot, grated
  • 1/4 tsp salt
  • 1 drizzle of oil

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Prep carrot. In a medium bowl combine all kofta ingredients (except oil). Using a tablespoon measure and damp hands, scoop out lamb mix and roll into balls, then flatten slightly so they are about 1cm-thick.
  3. Cook orzo in pot of boiling water for about 10 minutes, until tender. Add peas for last 2 minutes of cook time. Drain and return to pot with olive oil to prevent sticking.
  4. Heat oil in large fry-pan on medium-high heat. Cook kofta for about 3 minutes each side, until golden and cooked through.
  5. Prep capsicum. Fold capsicum, spinach, first measure of chermoula mayo and vinegar through cooked orzo. Season to taste with salt and pepper. Prep feta.
  6. Serve orzo topped with kofta, feta and a dollop of remaining chermoula mayo.
