
Pork, Pumpkin and Apple Sausage Rolls with Coleslaw

Sausage rolls a leap and bound ahead of your normal!
Ingredients
PORK, PUMPKIN AND APPLE SAUSAGE ROLLS
- 1/2 red onion, grated
- 1/2 cup grated carrot
- 1 apple, grated
- 1 1/2 cups grated peeled pumpkin
- 450g pork and paprika grind
- 1/2 cup GF panko breadcrumbs
- 1 egg
- 1 teaspoon salt
- GF flour (for rolling pastry)
- 400g GF flaky pastry
- 1 egg, whisked
COLESLAW
- 1/4 head cabbage
- 1 carrot
- 50g tasty cheese (optional)
- 2 tablespoons GF mayonnaise
TO SERVE
- GF tomato relish or sauce

oven to 200°C. Line a baking tray with baking paper.

Heat a drizzle of oil in a fry-pan on medium heat. Cook onion, carrot, apple and pumpkin for 3–4 minutes, until soft. While vegetables are cooking, combine pork and paprika grind, breadcrumbs, first egg and salt in a bowl. Add cooked vegetables to bowl and use a potato masher to combine well.

Lightly flour a clean, dry bench then lay pastry on top. Roll pastry so it is roughly 35x35cm. Trim edges, discard and cut remaining sheet in half lengthways and then into thirds (you should have 6 rectangles). Place one rectangle on prepared tray, with the short edge closest to you.

Place cup of sausage mixture on bottom third of the pastry and mould meat into a log shape. Roll pastry around sausage mixture to enclose it tightly. Arrange sausage roll on prepared tray, seam-side-down. Repeat with remaining pastry and sausage mixture.

Brush sausage rolls with whisked egg and bake for 20–25 minutes, or until pastry has puffed slightly and is golden brown.

Finely slice cabbage; grate carrot; grate cheese (if using); combine all in a bowl with mayonnaise. Season to taste with salt and pepper.

Place a sausage roll onto each plate with some coleslaw on the side. Serve tomato relish or sauce on the side.
