
Turkey and Lettuce Roll Ups with Sweet Chilli Kumara Wedges

These tasty lettuce roll ups are a delicious take on Chinese ‘sang choy bau’.
Ingredients
SWEET CHILLI KUMARA WEDGES
- 400g orange kumara, scrubbed and cut into 2cm-thick wedges
- 1 teaspoon sweet chilli sauce
- 1 tablespoon olive oil
VIETNAMESE TURKEY MINCE
- 1 tablespoon olive oil
- 300g turkey mince
- 1 kaffir lime leaf, tough central stem removed and thinly sliced
- 1 1/2 teaspoons finely grated ginger
- 1 clove garlic, minced
- Pinch of chilli flakes (optional)
- 2 spring onions, thinly sliced
- 1 1/2 teaspoons fish sauce
- 1 teaspoon soy sauce
- Juice of 1/4 lemon
- 1 teaspoon brown sugar or runny honey
VEGETABLES
- 1 carrot
- 1 spring onion
- 50g mung bean sprouts
DIPPING SAUCE
- 1 tablespoon fish sauce
- 1 tablespoon sweet chilli sauce
- 1 1/2 teaspoons lemon juice
TO SERVE
- 1 1/2 tablespoons chopped mint
- 1 baby cos lettuce, leaves separated

oven to 220°C. Line an oven tray with baking paper.

Toss kumara with sweet chilli sauce and first measure of oil on prepared tray. Season with salt and pepper and roast for about 20 minutes, until cooked through. Turn once during cooking.

Heat second measure of oil in a large fry-pan on medium-high heat. Cook turkey mince, kaffir lime leaf, ginger, garlic and chilli flakes (if using) for 3–4 minutes, breaking up mince with a wooden spoon, until browned and cooked through.

Stir through spring onions, fish sauce, soy sauce, lemon juice and sugar/honey. Remove from heat.

Prepare the vegetables. Peel carrot and cut into thin matchsticks or grate; thinly slice spring onion. In a medium bowl combine all with mung bean sprouts and set aside.

In a small bowl, mix together all dipping sauce ingredients and set aside.

Divide sweet chilli kumara wedges between plates. Place some Vietnamese turkey mince, vegetables and mint in a lettuce leaf. Spoon over dipping sauce, roll up and eat.
