Crispy Pre-Crumbed Orange Baked Fish with Roasties & Herb Aioli

Ingredients

To Serve

  • 1 pinch of chilli flakes, optional
  • 2 Tbsp herb aioli

Salad

  • 1 tomato, diced
  • 1 orange, peeled & diced
  • 1 pack baby spinach
  • 1 pack sliced almonds
  • 1 drizzle of olive oil
  • 1 tsp red wine vinegar

Fish

  • 1 pack crumbed fish fillets
  • 1/4 orange, zested

Roasties

  • 1 drizzle of oil
  • 1 carrot, diced 2cm
  • 400g potatoes, diced 2cm

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Prep potatoes and carrot and toss with oil on a lined oven tray. Season with salt and roast for 25–30 minutes, until golden and tender. Turn once during cooking.
  3. Place fish on a second lined oven tray and season with salt and orange zest. Bake fish for about 18 minutes, until crumb is golden. Flip halfway thorough cooking.
  4. Prep tomato and orange. Place all salad ingredients in a medium bowl and toss with olive oil and vinegar. Season to taste with salt and pepper.
  5. Roasties and fish with chilli flakes, salad and aioli.
