Coriander-Ginger Pesto Pork with Soba Noodles

An Asian-inspired dish, delicious pork coupled with succulent noodles.


Ingredients

CORIANDER-GINGER PESTO PORK, SOBA NOODLES AND VEGETABLES

  • 150g pork fillet (at room temperature)
  • 75g fresh soba noodles
  • 1 spring onion, thinly sliced
  • 1/2 carrot, peeled and cut into thin matchsticks or grated
  • 1/4 head broccoli, diced 0.5cm
  • 2 tablespoons water
  • 2 tablespoons coriander-ginger pesto
  • 1 tablespoon sweet chilli sauce Ÿ
  • 1 teaspoon rice wine vinegar Ÿ

TO SERVE

  • 1 tablespoon chopped roasted peanuts
  • 1 teaspoon coriander-ginger pesto
  • 2 tablespoons chopped coriander leaves and stalks

Steps

  1. a small pot of salted water to the boil.
  2. Heat a drizzle of oil in a medium fry-pan (with a lid) on high heat. Cut pork fillet in half lengthways, then cook for about 1 minute on each of all four sides until golden brown and nearly cooked through. Remove from pan and cover in foil to rest for 2–3­ mins.
  3. Shake noodles to separate strands, then cook in pot of boiling water for about 1 minute, until just tender. Drain and run under cold tap to prevent over-cooking. Drizzle with a little sesame oil to prevent sticking.
  4. Return pan used for pork to high heat and drizzle with oil. Stir-fry spring onion, carrot and broccoli for about 1 minute, add water and stir-fry for a further 1 minute, until vegetables are tender.
  5. Add first measure of coriander-ginger pesto, sweet chilli sauce and vinegar. Toss to coat and cover for 1 minute.
  6. Thinly slice pork and add to pan, along with any resting juices and cooked soba noodles. Toss to heat through for 1 minute, until pork is cooked through.
  7. Place coriander-ginger pesto pork, soba noodles and vegetables onto a plate. Garnish with peanuts, coriander-ginger pesto and coriander.
