Korean Style Vermicelli Noodles with Garlic Chilli Eggs & Peanuts

Japchae is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine


Ingredients

Veggies

  • 1/2 red onion, thinly sliced
  • 1 tsp honey
  • 1/2 pack korean stir-fry sauce
  • 1 drizzle of oil
  • 1 baby bok choy, sliced 3cm
  • 1 broccoli, cut into small florets

Eggs

  • 1/4 tsp garlic chilli blend
  • 2 egg
  • 1 drizzle of oil

To Serve

  • 1 pack chopped peanuts

Noodles

  • 1/2 pack korean stir-fry sauce
  • 100g vermicelli noodles, string removed

Steps

  1. Bring a full kettle to the boil.
  2. Prep onion, broccoli and bok choy.
  3. Place noodles in a medium heat-proof bowl and cover with boiling water. Leave for 5 minutes, until tender, then drain well and return to bowl. Cut noodles in a few places with kitchen scissors to make them easier to eat, then toss with first measure of Korean stir-fry sauce.
  4. Heat oil in a large fry-pan on medium-high heat. Cook onion and broccoli for about 6 minutes, until tender. Add bok choy, remaining Korean stir-fry sauce and honey and cook for about 30 seconds, until veggies are coated.
  5. Heat oil in a small non-stick fry-pan on medium heat. Crack eggs into pan one at a time and sprinkle with garlic chilli blend. Cook for about 3 minutes, until white is set and yolks are runny. Transfer to a plate and cover to keep warm.
  6. Noodles and veggies topped with an egg and peanuts.
