Ultimate Fish Pie with Cheesy Potatoes & Peas

Ingredients
Peas
- 150g frozen peas
Filling
- 2/3 leek, cut in half lengthways & thinly sliced
- 300g frozen fish fillets, defrosted, cut into 5cm lengths
- 1 drizzle of oil
- 1/4 tsp salt
- 2 Tbsp butter
- 1 pack Ultimate Pie Herbs
- 1 1/2 cup milk
- 1 pack baby spinach
- 2 Tbsp plain flour
Topping
- 400g potatoes, cut into chips
- 1/2 pack cheese, grated

Preheat oven to 220°C (or 200°C fan bake). Bring a large pot of salted water to the boil. Set aside a medium baking dish.

Cut potatoes into thick chips and cook in pot of boiling water for 10 minutes, until just soft (the point of a knife will slide in easily). Drain and return to pot. Grate cheese.

Prep leek. Pat fish dry, cut into 5cm pieces and set aside.

Heat oil in a large fry-pan on medium heat and cook leek and salt for about 5 minutes, until softened. Add butter and cook for about 1 minute, until melted. Add flour and ultimate pie herbs and cook for 1-2 minutes, until fragrant. Add milk, 1/2 cup at a time, stirring until sauce is smooth and combined. Season to taste with salt and pepper.

Stir fish and spinach into sauce then transfer mix into baking dish. Top evenly with chips, season with salt and sprinkle over cheese. Bake in oven for about 15 minutes, until cheese is melted and golden and fish is cooked through. Switch oven to high grill for final 2 minutes for an extra golden top.

While pie is baking, bring a small pot of salted water to the boil. Cook peas for about 3 minutes, until tender. Drain and return to pot, then season to taste with salt and pepper.
