French Onion Braised Chicken with Mash & Green Beans

Here’s a warm, incredibly tasty dish that suits winter perfectly. This recipe has caramelised onions, tender chicken breasts and is topped with cheese! It’s rich without being heavy, and deeply flavorful without too much work.
Ingredients
Mash
- 1 Tbsp butter
- 2 Tbsp milk
- 50g baby spinach, chopped
- 1 parsnip, diced 2cm
- 400g potatoes, diced 2cm
Onions
- 1 tsp brown sugar
- 1 drizzle of oil
- 1 brown onion, thinly sliced
Chicken
- 1 drizzle of oil
- 45g cheese, grated
- 1 Tbsp plain flour
- 1/2 pack Italian chicken spices
- 300g free range chicken breasts, sliced 2cm
- 1/2 cup beef stock
Beans
- 1 pack green beans

Bring a pot of salted water to the boil. Bring a full kettle to the boil.

Prep potatoes, parsnip and spinach. Add potatoes and parsnip to pot of water and cook for about 15 minutes, until soft. Drain and return to pot with milk and butter and mash, until smooth. Stir through spinach and season to taste with salt and pepper.

Prep onion. Heat oil in a medium fry-pan on medium-high heat. Cook onion and sugar with a pinch of salt for 8-10 minutes, until soft and caramelised. Transfer onion to a bowl and reserve pan.

Pat chicken dry and slice into 2cm strips. Season with salt and pepper and toss with Italian chicken spices and flour. Prep cheese and set aside.

Return pan to medium heat with oil. Cook chicken for about 2 minutes on one side, until golden. Turn chicken and return onion to pan along with stock. Sprinkle with cheese and cook for about 5 minutes, until chicken is cooked through and cheese is melted. Season to taste with salt and pepper.

Add green beans to a medium heat-proof bowl and cover with boiling water. Cover and leave for 5 minutes, before draining. Season to taste with salt and pepper.

Mash topped with chicken, onions and beans on the side.
