Crispy Southern Chicken Drums with Mash & Gravy

Ingredients

Chicken

  • 500g free range chicken drumsticks
  • 1 drizzle of oil
  • 1 pack chicken flour

Slaw

  • 1 tsp vinegar
  • 1 Tbsp mayonnaise
  • 1 pack slaw
  • 1/2 beetroot, peeled & grated

Potatoes

  • 1 Tbsp butter
  • 2 Tbsp milk
  • 400g potatoes, diced 3cm

Gravy

  • 3/4 cup beef stock
  • 1 pack sage & mustard spices
  • 1 Tbsp butter
  • 1 Tbsp plain flour

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Pat chicken dry and season with salt. Place in a bag or container with a tight-fitting lid along with chicken flour. Shake around, until chicken is coated. Place chicken on a lined oven tray and drizzle with oil. Roast for about 35 minutes, until golden and cooked through. Turn chicken halfway through cook time to ensure even cooking.
  3. Prep potatoes, place in a large pot and cover with hot tap water and a lid. Cook on high heat for 15-20 minutes, until soft. When potatoes are soft, drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.
  4. Prep beetroot. Add to a medium bowl with remaining slaw ingredients, mix to combine and season to taste with salt and pepper.
  5. Melt butter in a small pot on medium heat. Add flour and sage and mustard spices and cook, stirring, for 2 minutes. Add stock and whisk for about 3 minutes, until thickened.
  6. Chicken and mash with gravy and slaw on the side.
