Mongolian Style Beef with Bok Choy & Jasmine Rice

Ingredients
Beef
- 1 pack Mongolian sauce
- 600g beef mince
- 1 drizzle of oil
- 1 twin pack baby bok choy, sliced 1cm
- 2 spring onion, sliced 1cm
- 2 carrot, cut in half lengthways & thinly sliced
- 1 pack mung bean sprouts
To Serve
- 1 pack sesame seeds
Rice
- 2 1/4 cup boiling water
- 300g jasmine rice

Bring a full kettle to the boil.

Combine rice, boiling water measure and a pinch of salt in a medium pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 5 more minutes. Do not lift lid during cooking.

Prep carrot, spring onion and bok choy.

Heat oil in a large fry-pan on high heat. Cook carrot and beef for about 6 minutes, until browned. Add spring onion and cook for about 3 minutes, until softened. Add bok choy and Mongolian sauce and cook for 1 minute, until sauce is hot. Stir through mung bean sprouts.

Rice topped with Mongolian beef and sesame seeds.
