15-Minute Greek Chicken Bowl with Couscous & Tzatziki

Ingredients
To Serve
- 1 telegraph cucumber, diced
- 120g tzatziki
Chicken
- 1 drizzle of oil
- 600g diced free range chicken breast
- 2 tsp cornflour
- 100g sliced roasted capsicum
- 1/2 cup chicken stock
- 100g baby spinach
- 1 pack Greek spices
Couscous
- 1/2 tsp salt
- 1 1/2 cup boiling water
- 1 pack couscous

Bring a full kettle to the boil.

In a medium heat-proof bowl, combine boiling water measure, couscous and salt. Stir, cover and leave to swell for 5 minutes. Fluff up grains with a fork.

Heat oil in a large fry-pan on high heat. Add chicken, Greek spices and cornflour and cook for about 3 minutes to seal. Add roasted capsicum, stock and a pinch of salt and cook for about 5 minutes, until almost all stock has evaporated and chicken is cooked through.

Prep cucumber.

Remove pan from heat and stir through spinach. Season to taste with salt and pepper.

Couscous topped with chicken, tzatziki and cucumber.
