Potato Topped Pulled Beef Pie

Ingredients
Potato Top
- 400g potatoes, diced 2cm
- 2 Tbsp milk
- 1 Tbsp butter
- 1 pack grated Parmesan
Greens
- 1/2 broccoli, cut into small florets
- 150g frozen peas
Filling
- 1 brown onion, thinly sliced
- 2 carrot, diced 1cm
- 1 drizzle of oil
- 1/2 Tbsp butter
- 2 Tbsp plain flour
- 1/2 pack Beef Pie Herbs
- 1 1/2 cup beef stock
- 1/2 Tbsp Worcestershire sauce
- 1 tsp soy sauce
- 200g pulled beef

Preheat oven to high grill.

Prep potatoes. Add to a medium pot and cover with hot tap water and a pinch of salt. Cook on high heat for 20 minutes with a lid on, until very tender. Drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.

Prep onion and carrot. Heat oil and butter in a medium fry-pan on medium-high heat and cook onion and carrot with a pinch of salt for 5-6 minutes, until starting to brown. Add flour and beef pie herbs and cook for 1 minute. Add beef, stock, Worcestershire sauce and soy sauce, bring to a simmer and cook for about 2-3 minutes, until thickened. Season to taste with salt and pepper.

Transfer beef to a medium baking dish (approx 20cm x 20cm), top with potato mash and smooth out. Use a fork to make deep grooves into the topping and sprinkle with parmesan. Grill for 3-5 minutes, until cheese is golden.

While beef is simmering, bring a pot of salted water to the boil. Prep broccoli and cook with peas in pot of boiling water for about 3 minutes, until tender. Drain and return to pot.
