Persian Caramelised Leek & Feta Frittata

Ingredients

To Serve

  • 1 pack chermoula mayo

Salad

  • 1 Lebanese cucumber, thinly sliced
  • 1 radish, thinly sliced
  • 1 apple, thinly sliced
  • 1 pack chopped walnuts
  • 1 drizzle of olive oil
  • 2 tsp vinegar

Frittata

  • 2 Tbsp lite sour cream
  • 1/3 cup milk
  • 1/4 tsp salt
  • 1 pack eggs
  • 1/2 leek, thinly sliced
  • 50g feta cheese, crumbled
  • 1/2 pack cheese, grated
  • 1 drizzle of oil
  • 1 pack Middle Eastern spices
  • 1 pack baby spinach
  • 1/3 cup plain flour
  • 1/2 tsp baking powder

Steps

  1. Preheat oven to 200°C (or 180°C fan bake). If you don't have an oven-proof fry-pan, grease a baking dish (about 20 x 30cm).
  2. Prep leek, feta and cheese and set aside.
  3. Heat oil in a medium fry-pan on medium high heat and cook leek for about 5 minutes, until starting to soften. Add Middle Eastern spices and cook a further 2-3 minutes, until leek is golden and tender. Stir through spinach, then turn off heat.
  4. In a large bowl, whisk together flour, baking powder and salt. Season with pepper. Add eggs, milk and sour cream and whisk thoroughly to combine. Stir through feta. Transfer to baking dish, if using.
  5. Pour egg mixture on top of leek and top with cheese. Bake for 25-30 minutes, until golden and cooked through.
  6. Prep cucumber, radish and apple. Just before serving, toss all salad ingredients together in a medium bowl. Season to taste with salt and pepper.
  7. Frittata with salad and chermoula mayo.
