Creamy Pulled Beef Stroganoff with Mash

Ingredients

Mash

  • 400g potatoes, diced 3cm
  • 2 Tbsp milk
  • 1 Tbsp butter

Stroganoff

  • 1 carrot, cut in half lengthways & thinly sliced
  • 2/3 pack mushrooms, thinly sliced
  • 1 drizzle of oil
  • 1 pack Stroganoff Spices
  • 200g pulled beef
  • 3/4 cup beef stock
  • 1/2 brown onion, finely diced
  • 1 tsp Dijon mustard
  • 1/4 cup sour cream
  • 150g frozen peas

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Prep onion, carrot and mushrooms and set aside.
  3. Prep potatoes and cook in pot of boiling water for 15-20 minutes, until very soft. Drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.
  4. Heat oil in a medium fry-pan on high heat. Cook onion, carrot and mushrooms for about 5 minutes, until browned. Reduce heat to medium, add stroganoff spices and cook for a further 1 minute, stirring, until fragrant.
  5. Add beef, stock, mustard and peas to pan, bring to a simmer and cook for about 3 minutes, until sauce has thickened and beef is hot through. Stir through sour cream and season to taste with salt and pepper.
  6. Mash topped with beef stroganoff.
