Greek Spiced Lamb with Roasted Kumara Salad & Tzatziki

Souvlaki is one of the most popular street foods in Greece and for good reason. Juicy and well-seasoned meat and is finished with cooling tzatziki sauce. We've taken our inspiration from this to create a light and healthy meal, packed with fresh veggies.


Ingredients

Salad

  • 1/2 pack Greek spices
  • 1 parsnip, diced
  • 1 broccoli, cut into small florets
  • 1 red onion, cut into wedges
  • 800g kumara, diced
  • 1 drizzle of oil

Lamb

  • 1 drizzle of oil
  • 1/2 pack Greek spices
  • 600g lamb leg steak

Serve

  • 1 pack tzatziki
  • 2 tsp vinegar
  • 1 telegraph cucumber, finely diced
  • 1 bunch mint, leaves picked

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Prep kumara, onion, broccoli and parsnip. Toss kumara, parsnip and onion on 1-2 lined oven trays with first measure of Greek spices and oil. Season with salt and pepper and roast for an initial 15 minutes. After 20 minutes, add broccoli to trays and cook a further 8-10 minutes, until veggies are tender.
  3. Pat lamb dry, season with salt and pepper and toss with remaining Greek spices. Heat oil in a large fry-pan on medium-high heat. Cook lamb for 4-6 minutes each side for medium (depending on thickness) or until cooked to your liking. Rest, covered.
  4. Prep mint. Prep cucumber and toss in a small bowl with a drizzle of vinegar. Thinly slice lamb.
  5. Salad topped with lamb, cucumber and tzatziki. Sprinkle with mint.
