Greek Lamb & Feta Pizza

If you thought pizzas were exclusively Italian, look no further than this Greek rendition to inspire you. Greek spiced lamb, crisp red onion and not one but two types of cheese come together to create a Mediterranean taste sensation. A delicious salad on the side keeps things light and fresh.
Ingredients
Pizza
- 1 pack wholemeal pizza bases
- 1 Tbsp sweet chilli sauce
- 1 Tbsp tomato sauce
- 1 pack tomato paste
- 25g feta cheese, crumbled
- 1/2 pack cheese, grated
- 1 courgette, thinly sliced
- 150g Greek lamb mix
- 1/4 red onion, thinly sliced
Salad
- 1 Lebanese cucumber, diced 2cm
- 1/4 red onion, thinly sliced
- 1 tomato, diced 2cm
- 1 tsp red wine vinegar
- 1 drizzle of olive oil
- 25g feta cheese, crumbled
Steps

Preheat oven to 220°C (or 200°C fan bake). Preheat two oven trays or pizza stones (if using).

Prep onion, courgette, cheese and feta. In a small bowl, combine tomato paste, tomato sauce and sweet chilli sauce.

Spread tomato mixture evenly over pizza bases. Sprinkle with cheese. Pull off teaspoon amounts of lamb Greek lamb mix and dot over top of pizza. Sprinkle with onion, courgette and feta. Season with salt and pepper.

Place one pizza on each tray (use a fish slice to help with this). Bake for about 15 minutes, until bases are crisp and golden. Swap trays halfway to ensure even cooking. Cut pizza into slices.

Prep cucumber, tomato, onion and feta. Toss in a medium bowl with olive oil and vinegar and season to taste with salt and pepper.
