Cheesy Hawaiian BBQ Pizzas with Cos Salad

This is a tasty take on the classic Hawaiian pizza. Feel free to add some sliced ham or chicken to this pizza if you would prefer a little meat!


Ingredients

CHEESY HAWAIIAN BBQ PIZZAS

  • 3 GF pizza bases
  • 1 can GF pizza sauce with herbs
  • 1 can GF pineapple pieces, drained
  • 1/2 red onion, finely sliced (optional, adults)
  • 200g white button mushrooms, stems trimmed, finely sliced
  • 1 sweet Palermo capsicum, core and seeds removed and finely diced
  • 1/4 cup GF BBQ sauce
  • 2 cups grated colby cheese

COS SALAD

  • 1 cos lettuce
  • 1 Lebanese cucumber
  • 1 carrot
  • 1/4 cup GF salad dressing of your choice (optional)

Steps

  1. oven to 220°C. Preheat two oven trays. Alternatively preheat two pizza stones (if you have them).
  2. Lay three sheets of baking paper on bench and place a pizza base on top of each. Pour a little olive oil into a bowl and using fingers, rub oil around circumference of pizzas in a 1.5cm frame.
  3. Spread 2–3 tablespoons of pizza sauce over each base, leaving a bit of an edge for the crust. Sprinkle over pineapple pieces, onion (if using), mushrooms and capsicum. Drizzle over BBQ sauce, then evenly sprinkle over cheese and season with salt and pepper.
  4. Cut one pizza in half. Lift up baking paper with pizza on top and place one and a half pizzas on each tray/stone (use a fish slice to help with this). Cook pizzas until bases are crispy and golden, 12–14 minutes. Swap position of trays halfway through cooking so they cook evenly.
  5. While pizzas are cooking, prepare the salad. Finely slice lettuce; cut cucumber in half lengthways and thinly slice; peel and grate carrot. Place all in a bowl and season with salt and pepper. Toss with a drizzle of extra-virgin olive oil, or your favourite GF salad dressing just before serving
  6. Slice pizzas into 6 pieces. Place a few pieces of pizza onto each plate and serve salad on the side.
