
Black Pepper Stir-Fry with Crispy Salt and Pepper Tofu

A deliciously crispy salt and pepper tofu with a black pepper stir fry
Ingredients
NOODLES
- 200 g fresh noodles
BLACK PEPPER SAUCE
- 1 teapsoon ground black pepper
- 2 teapsoons soy sauce
- 2 teaspoons sweet chilli sauce
- 1 tablespoon runny honey
- 1 1/2 teaspoons rice wine vinegar
- 1 teaspoon sesame oil
CRISPY TOFU
- 300 g firm tofu
- 2 tablespoons cornflour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
STIR-FRY VEGETABLES
- 1 carrot, peeled and cut into thin matchsticks or grated
- 2 cloves garlic, minced
- 100 g snow peas, stringy part removed
- 1 courgette, cut into thin matchsticks or grated
- 250 g white button mushrooms, cut into quarters
TO SERVE
- 50 g chopped and roasted cashew nuts
- 3 tablespoons chopped coriander leaves and stalks
- 1 lime, cut into wedges
Steps

a full kettle to the boil.

In a heat-proof bowl, pour boiling water over noodles and use a fork to separate strands. Drain immediately and set aside.

Combine all black pepper sauce ingredients in a small bowl.

Slice tofu .cm and pat dry using paper towels. Combine cornflour, salt and pepper in a bowl and toss through tofu, coating evenly. Heat a drizzle of oil in a fry-pan on medium-high heat.

Cook tofu for – minutes each side, or until crispy. Remove from pan and set aside on a paper towel. Keep pan on heat.

Add extra oil to pan, if required. Stir-fry carrot and garlic for minute. Add all remaining vegetables and stir-fry a further minutes, until just tender. Add noodles and black pepper sauce and toss to combine for minute. If mixture is a little dry, toss through tablespoon water.

Divide stir-fry noodles and vegetables between bowls, top with crispy tofu, cashew nuts and coriander. Garnish with a wedge of lime to squeeze over just before serving.
