Fish Fingers with Lemon Mayo, Baby Roasties and Salad

Fish fingers always go down a treat with the little ones.


Ingredients

BABY ROASTIES

  • 600g baby potatoes, cut into quarters so they are all roughly the same size

FISH FINGERS

  • 450g fish fillets
  • 110g panko breadcrumbs
  • ½ cup flour, seasoned with salt and pepper
  • 1 egg
  • 3 tablespoons milk

SALAD

  • ½ telegraph cucumber, cut in half lengthways and thinly sliced
  • 1 sweet Palermo capsicum, seeds removed and thinly sliced
  • ½ bag baby spinach leaves
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons vinegar (e.g. red wine, white wine)

LEMON MAYO

  • ½ cup mayonnaise
  • Juice of 1 lemon

TO SERVE

  • 1 lemon, cut into wedges (optional, adults)

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Toss potatoes with a drizzle of oil and season well with salt and pepper. Roast for 20–25 minutes, until tender and crispy. Turn once during cooking.
  3. Pat fish dry, remove any remaining scales or bones and season with salt. Slice fillets into 2cmx8cm strips. Place seasoned flour in a bowl; whisk egg with milk in a second bowl; place crumbs in a third bowl. Coat fish first in flour, then egg, then crumbs, shaking off excess as you go.
  4. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook fish, in batches, for 1–2 minutes each side, until golden and just cooked through. Wipe out pan between batches, and add more oil as needed.
  5. Combine all salad ingredients in a large bowl and season with salt and pepper. In a small bowl, combine mayonnaise and lemon juice together.
  6. Divide baby roasties and fish fingers between plates. Serve salad and lemon mayo on the side. Dip fish fingers into lemon mayo or alternatively use tomato sauce. Squeeze over lemon juice just before eating.
