15-Minute Chicken Nasi Goreng with Fried Eggs & Peanuts

Ingredients

Nasi goreng

  • 1/2 kecap manis
  • 1 pack pre-cooked brown rice
  • 2 eggs
  • 1/2 pack lemongrass, ginger, garlic & makrut paste
  • 1 pack edamame stir-fry mix
  • 300g diced free range chicken breast
  • 1 drizzle of oil

To serve

  • 1/2 pack kecap manis
  • 1/2 pack whole peanuts
  • 1 mung bean sprouts
  • 1/2 lemon, cut into wedges

Steps

  1. Heat oil in a large fry-pan on high heat. Pat chicken dry and stir-fry for 4-5 minutes with a pinch of salt, until just cooked. Remove from pan and set aside, covered.
  2. Return pan to high heat with oil. Cook paste with veggies for about 5 minutes, until veggies are tender. Meanwhile, place a second, non-stick fry-pan on high heat. Crack eggs into pan and cook for 3-4 minutes, until whites are set.
  3. Squeeze rice in packs to separate grains and then add to pan with veggies. Continue to stir-fry for 2 minutes, until rice is hot. Stir chicken through cooked rice with first measure of kecap manis. Prep lemon.
  4. Nasi goreng topped with egg, kecap manis, mung bean sprouts and peanuts. Serve with a lemon wedge.
