Smoked Turkey and Apple Pizzas with Salad

These smoked Turkey pizzas are a tasty quick meal the whole family will love.


Ingredients

SMOKED TURKEY AND APPLE PIZZAS

  • 1 can chopped tomatoes
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 2 pizza bases
  • ½ red onion, finely diced
  • 1 apple, finely diced
  • 200g smoked turkey breast, finely diced (netting and casing removed)
  • 1 cup grated colby cheese
  • 1½ teaspoons turkey spice mix

SALAD

  • 1 baby cos lettuce
  • 1 tomato

HONEY MUSTARD MAYONNAISE

  • 1 teaspoon runny honey
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • ¼ cup mayonnaise

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Drain a little of the liquid from canned tomatoes and place in a bowl with garlic and olive oil. Season with salt and pepper and break up any larger tomato pieces with a fork.
  3. Lay two sheets of baking paper on bench and place pizza bases on top. Divide tomato mixture between bases and spread to cover.
  4. Sprinkle onion, apple, turkey, cheese and turkey spice mix over bases. Season with salt and pepper. Lift up baking paper with pizzas on top and place on trays/stones then slide baking paper away. Cook until base is crisp, 10–12 minutes. Swap trays halfway to ensure even cooking.
  5. Chop lettuce and dice tomato. Combine in a bowl with a drizzle of olive oil. In a bowl, combine all honey mustard mayonnaise ingredients together and mix well. Toss half through salad (reserve remainder for pizzas). Season to taste with salt and pepper.
  6. Cut each pizza into 8 pieces and place a few slices on each plate, drizzle over remaining honey mustard mayonnaise (if desired). Serve salad on the side.
