Bloody Mary Seasoned Beef Steaks with Grilled Veggies

This delectable salt blended with tomato and spices will enhance the flavour of your steak!


Ingredients

Veggies

  • 1 courgette, sliced 1cm
  • 1/2 capsicum, sliced 1cm
  • 1 drizzle of oil

Couscous

  • 100g couscous
  • 50g baby spinach
  • 3/4 cup chicken stock
  • 1 tomato, diced

To Serve

  • 2 Tbsp smoked tomato aioli
  • 1 pack sunflower & pumpkin seeds
  • 1/4 tsp bloody Mary salt

Beef

  • 300g beef rump steaks
  • 1/4 tsp bloody Mary salt
  • 1 drizzle of oil

Steps

  1. Preheat BBQ to medium, if using.
  2. Prep tomato and set aside. Prep courgette and capsicum and set aside.
  3. Bring stock to the boil in a medium pot (with a lid) on high heat. Once boiling, remove from heat, add couscous and a pinch of salt. Stir, cover and leave for 5 minutes, then fluff up grains with a fork.
  4. Pat beef dry and toss with first measure of bloody Mary salt and oil. Cook beef on BBQ for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered. Alternatively, cook beef in a large fry-pan on medium-high heat. Reserve pan for veggies.
  5. Toss courgette and capsicum with oil and cook on BBQ for about 4 minutes, until tender. Turn to ensure even cooking. Alternatively, return reserved pan to a medium high heat and cook veggies.
  6. Combine tomatoes and spinach with cooked couscous. Thinly slice beef.
  7. Couscous topped with beef, veggies, smoked tomato aioli and seeds. Season with bloody Mary salt.
