Focaccia BLT’s With Chipotle Sour Cream and Roasted Kumara

Jazz up your dinner with this delicious BLT with Chipotle Sour Cream.


Ingredients

ROASTED KUMARA

  • 600g red kumara, scrubbed and diced 2cm

BLT’S

  • 1 pack vine tomatoes
  • 1 Lebanese cucumber
  • 500g focaccia bread
  • 250g streaky bacon
  • 2 baby cos lettuces, ends trimmed and leaves separated

CHIPOTLE SOUR CREAM

  • 1/2 cup sour cream
  • 1 sachet chipotle sauce
  • 1 tablespoon tomato sauce (optional)

Steps

  1. oven to 220°C. Line two oven trays with baking paper.
  2. Toss kumara with a drizzle of oil on first prepared tray. Season well with salt and pepper and roast for 20–25 minutes until golden and crispy. Turn once during cooking to ensure even browning.
  3. While kumara is cooking, prepare the rest of the meal. Thinly slice tomatoes and cucumber; cut focaccia into 6 equal pieces, then cut in half horizontally. In a small bowl mix all chipotle sour cream ingredients together season with salt and pepper.
  4. Heat a drizzle of oil in large fry-pan on medium to high heat. Cook bacon, in batches, for about 3 minutes each side, until crispy. Set aside on paper towels.
  5. Place focaccia on second prepared oven tray, cut-side-up. Bake for 2–3 minutes until lightly toasted.
  6. Place tomatoes, cucumber, lettuce, bacon, chipotle sour cream and focaccia on table and let everyone build their own BLTs. Serve roasted kumara on the side.
