Pork Katsu Burger with Slaw & Sesame Corn Cobs

Katsu is a crispy fried cutlet of meat or seafood made with flaky Japanese panko breadcrumbs.


Ingredients

Corn

  • 2 corn cob
  • 1 pack sesame seeds
  • 1/2 Tbsp sesame oil

Pork

  • 100g breadcrumbs
  • 1 egg
  • 3 Tbsp plain flour
  • 1 Tbsp soy sauce
  • 600g free farmed pork sirloin steaks, cut into steaks
  • 1 drizzle of oil

To Serve

  • 2 Tbsp mayonnaise
  • 2 Tbsp katsu sauce

Slaw

  • 1 Tbsp soy sauce
  • 350g slaw

Buns

  • 1 pack burger buns, cut in half

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Bring a full kettle to the boil
  2. Pat pork dry and cut into thin steaks. Place your hand flat on top of pork and slice through horizontally. Toss in a large bowl with soy sauce. Add flour and toss to coat. Add egg to same bowl, split the yolk and toss to coat pork. Place breadcrumbs in a second large bowl. Place pork into the crumbs, turn to coat each piece well and place on a plate/tray.
  3. Cut corn into 4cm rounds. Place corn and a pinch of salt in a heat-proof bowl and cover with boiling water. Cover with a plate and leave for about 5 minutes, until tender. Drain.
  4. Heat oil in a large fry-pan on medium-high heat. Cook pork, in batches, for 2-3 minutes each side (depending on thickness), until just cooked through. Add more oil as needed. Reserve pan and wipe clean.
  5. Return pan to medium heat. Add corn, sesame oil and sesame seeds and cook for about 3 minutes, until sesame seeds are golden.
  6. Cut buns in half and wrap in foil. Bake for about 5 minutes, until heated through.
  7. Toss slaw and soy sauce in a bowl and season to taste with salt and pepper.
  8. Buns filled with mayonnaise, slaw, pork and katsu sauce. Serve corn on the side.
