Fish with Kumara Mash and Tomato Spinach and Carrot Salad

Fresh fish fillets spiced with our special smoked paprika spice mix.
Ingredients
KUMARA MASH
- 600g orange kumara, peeled and cut into even-sized pieces
- 1 tablespoon butter
TOMATO SPINACH AND CARROT SALAD
- 2 tomatoes
- 1 carrot
- ½ bag baby spinach leaves
- 2 tablespoons roughly chopped coriander leaves and stalks (optional, adults)
- Zest of 1 lemon
- Juice of ½ a lemon
- ¼ cup GF mayonnaise
- ½–1 clove garlic, minced (optional, adults)
FISH
- 450g fish fillets
- 2 tablespoons GF flour
- ¼ teaspoon salt
- 2 teaspoons GF smoked paprika spice mix (optional, adults)
- 1 tablespoon oil
- 1 tablespoon butter
TO SERVE
- ½ a lemon, cut into wedges (optional, adults)
- 1 tablespoon chopped coriander (optional, adults)

a large pot of salted water to the boil.

Cook kumara in pot of boiling water until soft, about 12 minutes. Drain, return to pot and mash with butter until smooth. Season to taste with salt and pepper. Cover and set aside.

While kumara cooks, prepare the salad; dice tomatoes; peel and grate carrot; roughly chop spinach; place all in a large bowl with coriander (if using). In a small bowl, mix lemon zest, lemon juice, mayonnaise and garlic (if using) together.

Pat fish dry with paper towels and remove remaining scales or bones. Cut any larger fillets half. On a plate, combine flour, salt and smoked paprika spice mix (if using). Add fish to lightly coat. Heat oil and butter in a large fry-pan (preferably non-stick) on medium to high heat. Fry fish, in batches, for about 2 minutes each side, or until golden brown and cooked through. Set aside on paper towels.

Spoon some kumara mash and salad onto plates and serve fish on the side. Top with a squeeze of lemon juice and sprinkle with coriander (if desired).
