Marinated Steak with Feta Spinach Smashed Potatoes

Marinate this Steak overnight to add flavour and tenderise the meat!


Ingredients

MARINATED STEAK

  • 450g beef rump steaks (at room temperature)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt

FETA SPINACH SMASHED POTATOES

  • 600g roasting potatoes, scrubbed and diced 2cm
  • 1/2 bag baby spinach leaves, roughly chopped
  • 150g feta cheese, crumbled
  • 2 tablespoons milk

PEA AND BEAN SALSA

  • 1 cup frozen peas, defrosted
  • 100g green beans, ends trimmed and finely sliced
  • 50g feta cheese, crumbled (optional, adults)

Steps

  1. BBQ grill or hot plate to medium to high (if using). Bring a medium pot of salted water to the boil.
  2. Pat beef dry with paper towels. Mix all remaining marinated steak ingredients together in a medium shallow dish, add beef and toss to coat. Set aside to marinate while you prepare the rest of the meal.
  3. Cook potatoes in pot of boiling water for 10–12 minutes until tender. Drain well and return to pot.
  4. While potatoes cook, heat a drizzle of oil in a large (preferably nonstick) fry-pan (or use BBQ grill or hot plate) on medium to high heat. Cook beef for about 2 minutes each side, for medium-rare (depending on thickness), or until cooked to your liking. Set aside on a plate, covered with foil to rest for 5 minutes, before slicing thinly against the grain.
  5. Add peas and beans to small pot of boiling water and cook for 2 minutes or until just tender then drain.
  6. Add spinach, first measure of feta and milk to potatoes and use a fork to roughly crush. Season with black pepper. Add remaining feta to peas and beans (if desired). Or keep plain for kids.
  7. Divide feta spinach smashed potatoes between plates, top with steak and pour over any resting juices. Serve pea and bean salsa on the side.
