Tasty Smoked Turkey and Cranberry Pizza with a Deliciously Light Mesclun Salad
Ingredients
SMOKED TURKEY AND CRANBERRY PIZZA
- 1 can chopped tomatoes
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 pizza base
- 1/2 red onion, finely sliced
- 1/2 punnet cherry tomatoes, cut in half
- 180g smoked turkey breast, diced 1cm
- 1 cup grated mozzarella cheese
- 1 teaspoon turkey spice mix
- 1/2 cup cranberry sauce
MESCLUN SALAD
- 1/2 bag mesclun mix
- 1 Lebanese cucumber, cut in half lengthways, finely sliced
- Juice of 1/2 a lemon
HONEY MUSTARD MAYONNAISE
- 1/2 teaspoon runny honey
- 1/2 teaspoon white wine vinegar
- 1/2 teaspoon Dijon mustard
- 2 tablespoons mayonnaise

oven to 220°C. Line an oven tray with baking paper. Alternatively preheat a pizza stone (if you have one).

Drain and discard about ¼ cup of liquid from canned tomatoes. Place tomatoes and remaining juice in a medium bowl with garlic and olive oil. Season with salt and pepper and break up any larger tomato pieces with a fork.

Place pizza base onto prepared tray (or pizza stone). Evenly spread tomato mixture over base; sprinkle over onion, tomato, smoked turkey and cheese. Sprinkle over turkey spice mix and season with salt and pepper. Cook for about 12 minutes, until base is crispy.

Combine mesclun and cucumber with a drizzle of olive oil and lemon juice in a large bowl and season with salt and pepper. In a small bowl, combine all honey mustard mayonnaise ingredients together and mix well.

Dollop cranberry sauce over cooked pizza and cut into 8 pieces. Lightly drizzle over honey mustard mayonnaise.

place a few pieces of pizza onto each plate and serve salad on the side.
