Smoked Pork Sausage and Pineapple Pizzas with Salad

A quick and easy meal which the kids will love, big or small!
Ingredients
SMOKED PORK SAUSAGE AND PINEAPPLE PIZZAS
- 70g tomato paste
- 1 tablespoon tomato sauce
- 2 tablespoons water
- 2 pizza bases
- 1 1/2 cups grated mozzarella cheese
- 200g smoked pork sausage, diced 0.5cm
- 1 can pineapple pieces, drained
- 1/2 capsicum, core and seeds removed and diced 1cm
SALAD
- 1 teaspoon Dijon mustard
- 1 teaspoon runny honey
- 2 teaspoons white wine vinegar or cider vinegar
- 2 tablespoons olive oil
- 1/2 iceberg lettuce
- 1 carrot
- 1/2 capsicum
- 1/4 cup BBQ sauce, to serve (optional)

oven to 210°C. Line two oven trays with baking paper.

In a small bowl, mix tomato paste, tomato sauce and water until smooth.

Place pizza bases on prepared trays and spread tomato sauce mixture over each base. Top evenly with cheese, sausage, pineapple and capsicum.

Bake for 12–15 minutes, or until cheese has melted and bases are crispy. Swap trays halfway through to ensure even cooking.

While pizzas cook, prepare the salad. In a small bowl, whisk together mustard, honey, vinegar and olive oil. Finely slice lettuce; peel and grate carrot; dice capsicum 1cm; add all to a large bowl. Toss salad with dressing just before serving or keep salad plain and drizzle dressing over to serve.

Cut each pizza into six pieces, serve on plates with a drizzle of BBQ sauce (if using) and some salad on the side.
