Beef and Cheese Burgers with Salad

A classic beef and cheese burger with a crispy side salad


Ingredients

BEEF PATTIES

  • 550g beef mince
  • 1/2 brown onion, grated
  • 1 carrot, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons burger spice mix
  • 2 teaspoons Worcestershire sauce
  • 1 egg
  • 3/4 cup fine breadcrumbs

TO SERVE

  • 6 burger buns
  • Butter or margarine (optional)
  • 1/4 cup tomato sauce
  • 1/2 block colby cheese, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1/2 telegraph cucumber, thinly sliced
  • 1/2 iceberg lettuce, leaves torn into smaller pieces
  • Mayonnaise
  • Salad dressing of your choice (optional)

Steps

  1. oven grill to high and line an oven tray with baking paper (if not using BBQ). Alternatively, preheat BBQ hot plate or grill to high (if using).
  2. Combine all beef patty ingredients in a medium bowl. Mix well using clean hands and shape into 6 even-sized balls, then flatten into patties, about the size to fit buns.
  3. Heat a drizzle of oil in a large fry-pan (preferably non-stick) on medium to high heat. Cook patties for 3–4 minutes each side until browned and cooked through, then set aside on a plate. Alternatively cook on BBQ hot plate or grill.
  4. Cut buns in half horizontally. Place on oven tray, cut-side up, and grill in centre of oven until light golden, about 2 minutes. Or brush with a little oil or butter and toast on BBQ hot plate for 30–60 seconds.
  5. Spread butter or margarine on toasted side of each bun (if desired). On the base of each bun place a beef patty, a drizzle of tomato sauce, cheese, tomato, cucumber and lettuce. Drizzle over mayonnaise and finish with top half of bun. Combine all remaining salad ingredients, toss with salad dressing (if desired) and serve as a salad on the side.
