Chilli Beef Con Carne with Rice & Sour Cream

Beef and bean chilli con carne with brown rice, sour cream and avocado.


Ingredients

Rice

  • 300g brown rice
  • 1 1/2 cup boiling water

Chili

  • 1 brown onion, finely diced
  • 1 can red kidney beans, drained & rinsed
  • 1 carrot, grated
  • 1 drizzle of oil
  • 500g beef mince
  • 3/4 tsp salt
  • 1 pack chilli con carne spices
  • 1 pinch of chilli flakes, optional
  • 250g frozen corn
  • 1 pack tomato paste
  • 1 can chopped tomatoes
  • 1 cup beef stock

To Serve

  • 125g sour cream
  • 2 Tbsp sweet chilli sauce
  • 1/2 lettuce, shredded
  • 1 avocado, diced

Steps

  1. Before you start. Bring a full kettle to the boil.
  2. Cook rice. Combine rice, boiling water measure and a pinch of salt in a medium pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 18 minutes. Turn off heat and steam, covered, for 10 more minutes. Do not lift lid during cooking.
  3. Prep chilli. Prep onion, beans and carrot.
  4. Cook chilli. Heat oil in a large fry-pan on high heat. Cook beef and onion for 8 minutes, until browned. Add salt, chilli con carne spices and chilli flakes and cook a further minute, until fragrant.
  5. Add beans, carrot, corn, tomato paste, canned tomatoes and stock to pan. Bring to a simmer, reduce heat to low and simmer for about 10 minutes, stirring occasionally, until thickened. Season to taste with salt and pepper.
  6. Prep sweet chilli sour cream. In a small bowl, mix sour cream and sweet chilli sauce together.
  7. To finish. Prep lettuce and avocado.
  8. Serve. Rice topped with chilli, sweet chilli sour cream, lettuce and avocado.
