
Beef Loaded Kumara Wedges with Mexican Chipotle

Roasted kumara wedges with Mexican beef chilli, cheese. sour cream and chipotle corn salad.
Ingredients
Kumara
- 800g kumara, cut into wedges
- 1 drizzle of oil
Beef
- 2 carrot, grated
- 1 drizzle of oil
- 600g beef mince
- 1 pack Mexican spices
- 1 tsp salt
- 1 pack tomato paste
- 1/2 pack chipotle sauce
- 1 1/2 cup beef stock
Salad
- 1/2 lettuce, shredded
- 250g frozen corn
- 1/2 pack chipotle sauce
- 1 Tbsp mayonnaise
To Serve
- 90g colby cheese, grated
- 4 Tbsp sour cream
- 1/2 tsp garlic chilli blend

Before you start. Preheat oven to 220°C (or 200°C fan bake). Bring a medium pot of salted water to the boil.

Prep & cook kumara. Prep kumara and toss on 1-2 lined oven trays with oil. Season with salt and pepper and roast for 20-25 minutes, until tender. Turn kumara once during cook time, to ensure even cooking.

Prep & cook beef. Prep carrot. Heat oil in a large fry-pan on medium-high heat. Cook beef for about 4 minutes, until browned. Add carrot, Mexican spices and salt to pan and cook for 2 minutes, until fragrant.

Add tomato paste, first measure of chipotle sauce and stock to pan and cook for about 2 minutes, until sauce has reduced and thickened slightly. Season to taste with salt and pepper.

Prep salad. Prep lettuce. Add corn to pot of boiling water and cook for about 3 minutes, until tender. Drain and place in a large bowl with remaining salad ingredients. Toss and season to taste with salt and pepper.

To finish. Prep cheese.

Serve. Kumara topped with beef, cheese, sour cream and garlic chilli blend. Serve salad on the side.
