Beef Scotch Steaks with Mash & Garlic Cream

Ingredients
Mash
- 800g potatoes, peeled & diced
- 1 parsnip, diced
- 1/2 cauliflower, roughly chopped
- 1/2 cup milk
- 1 Tbsp butter
Beef
- 1 drizzle of oil
- 600 beef scotch fillet steak
- 1 pack peppercorn rub (optional)
Greens
- 1 broccoli, cut into small florets
- 250g frozen peas
To Serve
- 1 pack garlic cream

Before you start. Bring a large and medium pot of salted water to the boil.

Prep & cook mash. Prep potatoes, parsnip and cauliflower. Add to large pot of boiling water and cook on high heat for 15-20 minutes, until tender. Drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.

Prep beef. Heat oil in a large fry-pan on medium-high heat. Pat beef dry, season with salt and coat in peppercorn rub. Keep some beef plain for fussier little foodies.

Cook beef. Cook beef for 3-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for 3-4 minutes, before slicing.

Prep & cook greens. Prep broccoli. Cook broccoli and peas in medium pot of boiling water for 3-4 minutes, until tender. Drain and season to taste with salt and pepper.

Serve. Mash with beef, greens and garlic cream.
