Pork Pad See Ew with Vermicelli & Peanuts

Ingredients

Pork

  • 1 lemon, juiced
  • 1/2 tsp chilli flakes
  • 2 tsp soy sauce
  • 550g lean free farmed pork sirloin steaks
  • 1 tsp oil

Noodles & Vegetables

  • 100g vermicelli noodles
  • 1/2 pack mushrooms, thinly sliced
  • 1 broccoli, cut into small florets
  • 2 carrot, cut in half lengthways & thinly sliced
  • 2 tsp oil
  • 1/4 cup water
  • 1 Tbsp soy sauce
  • 100g pad see ew sauce

To Serve

  • 1/2 bunch mint, leaves picked
  • 1 pack mung bean sprouts
  • 2 pack chopped peanuts

Steps

  1. Before you start. Bring a full kettle to the boil.
  2. Prep pork. Prep lemon and combine in a large bowl with chilli flakes and first measure of soy sauce. Pat pork dry, season lightly with salt and add to bowl to marinate.
  3. Cook noodles & prep vegetables. Place noodles in a heat-proof bowl and cover with boiling water. Leave for 5 minutes, then drain and set aside. Prep mushrooms, broccoli and carrot.
  4. Cook pork. Heat oil in a large fry-pan on medium heat. Cook pork for 3-4 minutes each side (depending on thickness), until just cooked through. Rest, covered. Reserve pan.
  5. Cook vegetables. Heat oil in reserved pan on high heat. Add mushrooms and stir-fry for about 1 minute. Add broccoli and carrot and cook for 2 minutes. Add water and second measure of soy and cook for a further 2 minutes, until tender.
  6. Finish noodles. Add noodles to pan and cook for about 1 minute to heat through. Remove from heat and stir through pad see ew sauce. Season to taste with salt and pepper.
  7. To finish. Thinly slice pork and stir any resting juices through noodles. Prep mint.
  8. Serve. Noodles topped with pork, mung bean sprouts, peanuts and mint.
