
Pork Pad See Ew with Vermicelli & Peanuts

Ingredients
Pork
- 1/2 lemon, juiced
- 1/4 tsp chilli flakes
- 1 tsp soy sauce
- 275g lean free farmed pork sirloin steaks
- 1/2 tsp oil
Noodles & Vegetables
- 50g vermicelli noodles (see tip)
- 1/4 pack mushrooms, thinly sliced
- 1/2 pack green beans, halved
- 1 carrot, cut in half lengthways & thinly sliced
- 1 tsp oil
- 3 Tbsp water
- 1/2 Tbsp soy sauce
- 50g pad see ew sauce
To Serve
- 1/2 bunch mint, leaves picked
- 1/2 pack mung bean sprouts
- 25g chopped peanuts

Before you start. Bring a full kettle to the boil.

Prep pork. Prep lemon and combine in a medium bowl with chilli flakes and first measure of soy sauce. Pat pork dry, season lightly with salt and add to bowl to marinate.

Cook noodles & prep vegetables. Place noodles in a heat-proof bowl and cover with boiling water. Leave for 5 minutes, then drain. Set half the noodles aside (this is leftover). Prep mushrooms, green beans and carrot.

Cook pork. Heat oil in a medium fry-pan on medium-high heat. Cook pork for 3-4 minutes each side (depending on thickness), until just cooked through. Rest, covered. Reserve pan.

Cook vegetables. Heat oil in reserved pan on high heat. Add mushrooms and stir-fry for about 1 minute. Add green beans and carrot and cook for 2 minutes. Add water measure and second measure of soy sauce and cook for a further 2 minutes, until tender.

Finish noodles. Add noodles to pan with vegetables and cook for about 1 minute to heat through. Remove from heat and stir through pad see ew sauce. Season to taste with salt and pepper.

To finish. Thinly slice pork and stir any resting juices through noodles. Prep mint.

Serve. Noodles topped with pork, mung bean sprouts, peanuts and mint.
