Moroccan Fish and Vegetable Couscous with Honeyed Yoghurt

Pan fried fish coated in Moroccan spices paired with a vegetable couscous and served with a drizzle of honeyed yoghurt


Ingredients

MOROCCAN FISH

  • 450 g fish fillets
  • 2 teaspoons Moroccan spice mix (optional, adults)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 tablespoon oil (e.g. canola, flour)
  • 1 tablespoon butter

VEGETABLES

  • 1 tomato
  • 1/2 bag baby spinach leaves
  • 2 carrots
  • Zest of 1/2 a lemon (optional, adults)
  • Juice of 1/2 a lemon (optional, adults)
  • 1 tablespoon extra-virgin olive oil

COUSCOUS

  • 1 cup couscous
  • 1/2 teaspoon salt
  • 1/2 teaspoon Moroccan spice mix
  • 1/4 cup golden raisins
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup boiling water

TO SERVE

  • 1/2 cup natural yoghurt
  • 1/2 teaspoon runny honey
  • Juice of 1/2 a lemon

Steps

  1. a full kettle to the boil.
  2. Pat fish dry with paper towels, remove any remaining scales or bones and cut any larger fillets in half. Coat with Moroccan spice mix (if using), first measure of olive oil and salt then set aside to marinate for 5 minutes.
  3. Prepare vegetables; dice tomato; finely slice spinach leaves; peel and grate carrots; place all in a large bowl with lemon zest and juice (if using). Toss to combine.
  4. Place all couscous ingredients in a medium, heat-proof, bowl. Stir, cover with a plate and leave for 5 minutes, then fluff up grains with a fork.
  5. While couscous is cooking, heat oil and butter in a large fry-pan on medium to high heat and cook fish for 1–2 minutes each side, until just cooked through.
  6. Toss couscous through vegetables. Drizzle with extra-virgin olive oil and season with salt and pepper.
  7. In a small bowl, mix yoghurt, honey and lemon juice.
  8. Divide vegetable couscous between plates and top with fish. Drizzle over honeyed yoghurt.
