Beef Spaghetti Bolognese

Ingredients

Pasta

  • 3/4 pack spaghetti
  • 1 drizzle of oil

Bolognese

  • 1 brown onion, finely diced
  • 1 carrot, grated
  • 1 parsnip, grated
  • 1 drizzle of oil
  • 500g beef mince
  • 1 pack bolognese herbs & spices
  • 1 pack tomato paste
  • 1 can whole tomatoes
  • 1/2 cup water
  • 2 tsp balsamic vinegar
  • 1/2 tsp salt
  • 1/2 pack baby spinach

To Serve

  • 1/2 pack colby cheese, grated

Steps

  1. Before you start. Bring a large pot of hot salted tap water to the boil.
  2. Cook pasta. Cook pasta in pot of boiling water for 8-10 minutes, until just tender. Stir occasionally. Drain and return to pot with oil to prevent sticking. Cover to keep warm.
  3. Prep veggies. Prep onion, carrot and parsnip.
  4. Meanwhile, cook beef. Heat oil in a large fry-pan on high heat. Cook beef for 3-4 minutes, stirring, until browned. Add onion, carrot, parsnip and Bolognese spices and cook for about 3-4 minutes, until veggies are soft.
  5. Cook sauce. Add tomato paste, canned tomatoes, water, balsamic vinegar and salt to beef and stir through. Reduce heat to mediumhigh and simmer for 3-5 minutes, until sauce is reduced and thickened slightly. Stir occasionally.
  6. To finish. Gently fold spinach through sauce. Continue to simmer for a further 1 minute, until spinach has wilted. Season to taste with salt and pepper.
  7. Serve. Bolognese topped with cheese.
