Thai Beef, Kumara, Kaffir Lime and Spinach Salad

Fresh, tasty Thai beef salad with kumara, green beans and spinach,
Ingredients
KUMARA AND BEANS
- 200g orange kumara, scrubbed and diced 1cm
- 1 teaspoon kumara and beef spice mix
- 1 teaspoon sweet chilli sauce
- 1/2 clove garlic, minced
- 100g 100g green beans, ends trimmed
DRESSING
- 1 kaffir lime leaf, tough central stem removed, very finely sliced
- Pinch chilli flakes (optional)
- 1 teaspoon finely grated ginger
- 1/2 clove garlic, minced
- 1 teaspoon fish sauce
- 2 teaspoons sweet chilli sauce
- 1 teaspoon olive oil
BEEF AND SALAD
- 150g beef sirloin steak (at room temperature)
- 1/2 teaspoon kumara and beef spice mix
- 2 handfuls baby spinach leaves
- 2 tablespoons chopped coriander and mint
- 2 tablespoons chopped roasted peanuts, to serve

oven to 200°C. Line an oven tray with baking paper.

Toss kumara with a drizzle of olive oil, kumara and beef spice mix, sweet chilli sauce and garlic in prepared tray. Season with salt and roast for about 15 minutes then add green beans and toss through and cook a further 5 minutes. Kumara should be browned and a bit sticky on edges and beans crunchy.

In a small bowl, mix all dressing ingredients together and set aside.

Pat beef dry with paper towels. Rub over kumara and beef spice mix and season well with salt. Heat a drizzle of oil in a small fry-pan on medium to high heat. Cook beef for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Wrap in foil and set aside to rest for 2–3 minutes, before slicing thinly against the grain

Toss kumara, beans, and sliced beef with spinach, herbs and 1 tablespoon of the dressing.

Place salad onto a plate and garnish with peanuts.
