Creamy Bacon & Basil Pasta

Ingredients

Pasta

  • 1/2 broccoli, cut into small florets
  • 1 pack pasta
  • 1 drizzle of oil

Sauce

  • 200g shoulder bacon, diced 1cm
  • 1/2 brown onion, thinly sliced
  • 1 pack roasted capsicum, thinly sliced
  • 1 garlic clove, minced
  • 1 drizzle of oil
  • 1 pack basil drizzle
  • 1/2 tsp salt
  • 4 Tbsp sour cream

To Serve

  • 30g grated Parmesan cheese

Steps

  1. Before you start. Bring a large pot of salted water to the boil.
  2. Prep broccoli & cook pasta. Prep broccoli. Cook pasta in pot of boiling water for 8 minutes, add broccoli and cook a further 3 minutes, until just tender. Drain and return to pot with oil to prevent sticking.
  3. Prep sauce. Prep bacon, onion, roasted capsicum and garlic.
  4. Cook sauce. Heat oil in a fry-pan on medium heat. Cook bacon for about 5 minutes, until starting to brown. Add onion, capsicum and garlic and cook for a further 2-3 minutes, until softened.
  5. Finish sauce. Reduce heat to medium-low and add basil drizzle, salt, sour cream, drained pasta and broccoli. Cook a further minute, until warmed through. Season to taste with salt and pepper.
  6. Serve. Pasta topped with cheese.
