Mushroom & Cream Cheese Pizzas

Ingredients
Pizza
- 1/4 red onion, thinly sliced
- 1 pack colby cheese, grated
- 1/4 cup cream cheese
- 2 Tbsp vegan basil pesto
- 1/2 pack tomato paste
- 1 Tbsp sweet chilli sauce
- 1 pack wholemeal pizza bases
- 1 pack sliced mushrooms
Salad
- 1 tsp honey
- 1 tsp wholegrain mustard
- 1 drizzle of olive oil
- 2 tsp balsamic vinegar
- 1 tomato, diced
- 1/2 pack rocket
To Serve
- 2 Tbsp vegan basil pesto
Steps

Before you start. Preheat oven to 220°C (or 200°C fan bake). Preheat two oven trays.

Prep pizza. Prep onion and cheese. In a small bowl, combine cream cheese and first measure of basil pesto. In a second bowl, mix together tomato paste and sweet chilli sauce. Divide tomato paste mixture between pizza bases, spread evenly to cover and sprinkle with cheese.

Sprinkle onion and mushrooms evenly over pizzas and dollop with pesto cream cheese. Season with salt and pepper.

Cook pizza. Transfer pizzas to preheated trays and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Prep salad. In a large bowl, whisk together honey, mustard, olive oil and balsamic vinegar with a pinch of salt. Prep tomato and add to bowl along with rocket, just before serving. Toss to combine.

To finish. Cut pizza into slices.

Serve. Pizza drizzled with second measure of basil pesto and salad on the side.
