Beef Nasi Goreng with Sesame Sauce

Ingredients
Rice
- 1/2 cup jasmine rice
- 3/4 cup boiling water
- 1 tsp sesame oil
- 1 Tbsp soy sauce
Veggies
- 1 drizzle of oil
- 1/2 capsicum, diced
- 1/2 broccoli, cut into small florets
- 1 carrot, grated
Egg
- 2 eggs
- 1 spring onion, thinly sliced
- 1 Tbsp sesame seeds
- 1 drizzle of oil
Beef
- 1 drizzle of oil
- 300g beef mince
- 1 pack nasi goreng spices
- 1/2 Tbsp ginger, grated
- 2 cloves garlic, minced
- 1/2 tsp salt
To Serve
- 2 Tbsp sesame crème
- Pinch of garlic chilli blend

Before you start. Bring a full kettle to the boil.

Cook rice. Combine rice, boiling water measure and a pinch of salt in a pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Prep veggies & egg. Prep capsicum, broccoli, carrot, spring onion, ginger and garlic. Set aside separately. Whisk eggs in a bowl with spring onion and sesame seeds. Season with salt and pepper.

Cook egg. Heat oil in a non-stick fry-pan or wok on mediumhigh heat. Pour in egg mixture and cook for about 4 minutes, until set. Set egg aside and keep pan on medium-high heat.

Cook beef. Heat oil in pan on medium-high heat, add beef and cook for about 4 minutes, until browned. Add nasi goreng spices, ginger, garlic and salt and cook a further 2 minutes, until beef is cooked through. Remove beef from pan and set aside in a bowl. Reserve pan.

Cook veggies. Return reserved pan to medium-high heat with oil. Add capsicum, broccoli, carrot and a splash of water to pan and cook for about 5 minutes, until tender. Set veggies aside with beef and keep pan on medium-high heat.

To finish. Add sesame oil and cooked rice to pan, cook for 3 minutes, stirring often and scraping bottom of pan. Add soy sauce and stir to combine. Return beef and veggies to pan and cook about 1 minute, until heated through. Season to taste with soy sauce. Thinly slice egg.

Serve. Nasi goreng topped with egg, sesame crème and garlic chilli blend.
