Pulled Beef & Kumara Massaman with Coriander

Ingredients
Rice
- 75g brown rice
- 1/2 broccoli, finely chopped
Curry
- 1/2 tsp oil
- 1/2 red onion, thinly sliced
- 100g kumara, diced 1cm
- 1/2 Tbsp massaman curry paste
- 80ml lite coconut milk
- 1 1/2 cups chicken stock
- 3/4 tsp fish sauce
- 200g pulled beef
Salsa
- 1/2 Lebanese cucumber, diced 1cm
- 1/2 capsicum, diced 1cm
- 1 tsp vinegar
- 1 tsp soy sauce
To Serve
- 1 tsp chopped peanuts
- 1/2 bunch coriander, leaves picked
Steps

Before you start. Bring a medium pot of salted water to the boil.

Prep & cook rice. Cook rice in pot of boiling water for about 25 minutes, until tender. Prep broccoli and add to pot for final 3 minutes of cook time. Drain well, season with salt and pepper and cover to keep warm.

Prep & cook curry. Prep onion and kumara. Heat oil in a pot on medium-high heat. Cook onion and kumara for about 2 minutes, until soft. Add massaman curry paste and cook for about 1 minute, until fragrant.

Add coconut milk, stock and fish sauce and bring to a simmer. Simmer for 15-20 minutes, until kumara is tender. Add beef and a pinch of salt and heat through for 2-3 minutes. Season to taste with salt and pepper.

Prep salsa. Prep cucumber and capsicum. Mix all salsa ingredients in a bowl and season to taste with salt and pepper.

To finish. Prep coriander.

Serve. Rice topped with curry, salsa, peanuts and coriander.
