Tuscan Beef Pasta

Ingredients
Beef
- 1 drizzle of oil
- 500g Tuscan beef grind
- 1 leek, cut in half lengthways & thinly sliced
- 1 carrot, grated
- 1 courgette, grated
- 2 Tbsp tomato paste
- 1 pack beef spices
- 400g chopped tomatoes
- 1/2 cup hot water
- 2 tsp sugar (optional)
- 1 drizzle of balsamic vinegar
Pasta
- 375g pasta
- 1 drizzle of oil
To Serve
- 50g feta cheese, crumbled
Steps

Before you start. Bring a large pot of hot salted tap water to the boil on high heat with the lid on.

Cook beef. Heat oil in a large, deep, fry-pan on high heat. Add beef and cook for about 5 minutes.

Prep & cook veggies. While beef cooks, prep leek, carrot and courgette. Add veggies, tomato paste and beef spices to beef and cook for 3-4 minutes, until starting to soften.

Meanwhile, cook pasta. Add pasta to pot of boiling water and cook for 9-10 minutes, until just tender. Drain well and toss with oil to prevent sticking.

Finish beef. Add canned tomatoes, water measure, sugar and balsamic vinegar to pan with beef. Bring to a simmer, then reduce to medium and cook for about 6 minutes until sauce has thickened and reduced. Season to taste with salt and pepper.

To finish. Prep feta.

Serve. Pasta topped with beef and feta.
