Beef Cottage Pie with Greens

Ingredients

Topping

  • 800g potatoes, peeled & diced
  • 2 Tbsp butter
  • 1/2 cup milk
  • 1 pack cheese, grated

Filling

  • 1 brown onion, diced
  • 1 carrot, grated
  • 1 drizzle oil
  • 600g beef mince
  • 1 pack beef pie spices
  • 1 cup water
  • 2 Tbsp tomato sauce

Greens

  • 1 broccoli, cut into small florets
  • 250g frozen peas
  • 1 Tbsp butter

Steps

  1. Before you start. Preheat oven to high grill. Set a baking dish aside.
  2. Prep & cook topping. Prep potatoes and cook in a pot of salted water, covered, for about 20 minutes, until tender. Drain and return to pot with butter and milk and mash until smooth. Season with salt and pepper.
  3. Prep filling & greens. Prep onion and carrot. Prep broccoli and set aside.
  4. Cook filling. Heat oil in a fry-pan on high heat and cook beef for about 4 minutes, until browned. Add onion and 1 tsp salt and cook a further 3 minutes, until starting to soften. Add carrot and beef pie spices and cook for 1 minute, until fragrant. Add water measure and simmer for about 3 minutes, until thickened. Fold through tomato sauce and season to taste with salt and pepper.
  5. Finish pie. Pour filling into a baking dish and evenly spread topping over. Sprinkle with cheese and grill for about 2 minutes, until bubbling and golden.
  6. Cook greens. Bring a pot of salted water to the boil. Add broccoli and peas and cook for about 3 minutes, until bright green and tender. Drain and toss with butter. Season to taste with salt and pepper.
  7. Serve. Cottage pie with greens.
