Crumbed Pork Steaks with Spiced Potatoes & Slaw

Ingredients
Potatoes
- 200g potatoes
- 1 pack potato spices
- 1 drizzle of oil
Slaw
- 1/2 apple, thinly sliced
- 1/2 pack slaw
- 1 drizzle of olive oil
- 1 drizzle of vinegar
Pork
- 150g pork scotch steaks
- 1/2 Tbsp flour
- 1 egg yolk
- 1/4 pack panko breadcrumbs
- 1 drizzle of oil
To Serve
- 1 Tbsp red pepper pesto aioli

Before you start. Preheat oven to 220°C.

Prep & cook potatoes. Prep potatoes and toss on a lined oven tray with potato spices and oil. Season with salt and pepper and roast for about 30 minutes, until tender. Turn once during cooking.

Prep slaw. Prep apple and toss in a bowl with slaw, olive oil and vinegar. Season to taste with salt and pepper.

Prep pork. Pat pork dry, season with salt and pepper and place in a bowl. Add flour to bowl and toss to coat. Add egg yolk to bowl and toss to coat each piece of pork. Place breadcrumbs on a plate and coat pork in crumb, shaking off excess egg as you go.

Cook pork. Heat a oil in a fry-pan on medium-high heat. Cook pork for about 2 minutes each side, until golden. Transfer to a lined oven tray and bake for 4-6 minutes, until just cooked through. Set aside to rest, uncovered.

To finish. Slice pork.

Serve. Pork, potatoes and slaw with red pepper pesto aioli.
