Pulled Beef Burrito Bowl with Chipotle Sour Cream

Ingredients
RICE
- 35g brown rice
- 1/4 cup frozen corn
BEEF
- 1/4 red onion, thinly sliced
- 4g Mexican spices
- Pinch of chilli flakes (optional)
- 2 tsp tomato paste
- 100g pulled beef
- 1/3 cup chicken stock
CHIPOTLE SOUR CREAM
- 2 Tbsp lite sour cream
- 15-25g chipotle sauce
TO SERVE
- 1/2 baby lettuce, shredded
- 1/2 tomato, diced
- 1/4 Lebanese cucumber, diced
- 1 tsp pumpkin sunflower seed mix

Bring a pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for 20- 25 minutes, until tender. Add corn to pot for the final 3 minutes of cook time. Drain, return to pot and cover to keep warm.

Prep & cook beef. Prep onion. Heat 1/4 tsp oil in a fry-pan on medium-high heat. Cook onion for about 2 minutes, until softened. Add Mexican spices, chilli flakes and tomato paste and cook for about 1 minute, until fragrant.

Add pulled beef, stock and a pinch of salt and bring to a simmer. Simmer on medium heat for 2-3 minutes, until thickened. Season to taste with salt and pepper.

Make chipotle sour cream. In a small bowl, combine sour cream and chipotle sauce with a pinch of salt.

Prep serving ingredients. Set lettuce, tomato and cucumber aside.

Serve rice, beef, lettuce, tomato and cucumber topped with chipotle sour cream and seeds.
