Beef & Pork Cottage Pie with Lemony Greens

Ingredients

COTTAGE PIE

  • 200g kumara, peeled & diced 2cm
  • 1 carrot, diced 2cm
  • 1/2 red onion, thinly sliced
  • 1 clove garlic, minced
  • 1 pack lean ground beef & pork
  • 1 pack cottage pie blend
  • 1/2 pack tomato paste
  • 1/2 cup water
  • 1/2 Tbsp soy sauce

GREENS

  • 1/2 broccoli, cut into small florets
  • 1 pack Brussels sprouts, quartered
  • Zest & juice of 1/2 lemon
  • 1/2 cup frozen peas
  • 2 Tbsp water
  • 1 Tbsp lite sour cream

Steps

  1. Preheat oven grill to high. Bring a pot of salted water to the boil. Set a baking dish aside.
  2. Prep & cook kumara & carrot. Cook kumara and carrot in pot of boiling water for about 18 minutes, until very tender. Drain well, return to pot and mash well with a pinch of salt. Cover to keep warm.
  3. Prep greens. Prep broccoli, Brussels sprouts and lemon.
  4. Prep onion & garlic & cook pie filling. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Cook onion and garlic for 1-2 minutes. Add beef and pork and cook for 3-4 minutes, until browned. Add cottage pie blend and tomato paste, cook for 1 minute then add water measure, soy sauce and a pinch of salt. Bring to a simmer and cook for about 5 minutes, until thick. Season to taste with salt and pepper and remove from heat.
  5. Finish pie. Transfer pie filling to a baking dish and top evenly with kumara mash. Use a fork to rough the top of pie. Grill for 4-5 minute, until golden.
  6. Cook greens. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Add broccoli and Brussels sprouts and sauté for 4-5 minutes. Add peas and water measure and cook for a further 1 minute, until greens are tender. Stir through sour cream and lemon and season to taste with salt and pepper.
  7. Serve cottage pie with greens on the side.
